Nothing beats a cozy bowl of soup at the end of a busy day, and this curated collection of easy healthy soup recipes is built to get one in your hands without much fuss. Some are quick, some take a little longer but stay simple to make, and all of them add up to a satisfying weeknight dinner.

I intentionally chose a range of soup styles here. Some are brothy and light, perfect as a starter or alongside a salad or sandwich. Others, like the smoky vegetarian chili or the Italian sausage, kale, and white bean soup, are substantial enough to be dinner on their own. The common denominator: they're all built on real food, like fresh produce, lean protein, and Mediterranean diet staples such as olive oil, beans, and whole grains.
Many of these soups are also meal prep, freezer, and leftover-friendly. Soups make great dinners, but they make even better lunches the next day, whether that's for work or school. And having a container in the freezer for evenings that go sideways is always a relief.
Stocking your pantry for healthy soup dinners
Many healthy soups start with the same basic ingredients, and it's worth keeping a few of them on hand in your pantry or freezer so a soup can come together whenever you need it. Here are some of my favorites to keep stocked:
Chicken and vegetable broth: I keep low-sodium chicken broth and vegetable broth stocked at all times. Both are useful for soups, sauces, and skillet dinners, and the more you have on hand, the more you'll reach for them. Find a brand you like and stock up whenever it's on sale.
Beans: Canned beans such as cannellini, garbanzo, and kidney beans are essential items in a Mediterranean-style pantry, along with dried beans like lentils. They work well in healthy soup recipes and are often interchangeable.
Canned diced tomatoes: I always say you're 30 minutes away from a meal with a can of diced tomatoes. I buy them on sale, in bulk, whenever I can. Muir Glen Organic fire-roasted diced tomatoes are my favorite.
Garlic and onion: These two aromatics are the starting point for many a soup recipe, and worth keeping stocked in your pantry. Crushed garlic is also available frozen in small portions or in a tube (but there's really no substitute for a freshly chopped onion).
Chicken Italian sausages: Aidell's chicken sausages are a staple in this house, and having a package in the freezer means I'll always have something to throw into a soup. They only need to be partially defrosted to slice or dice, so they're far more convenient than other last-minute protein options.
Frozen vegetables: Always an option in a pinch, and usually just as good as fresh. Carrots, peas, green beans, kale, corn, and even cubed butternut squash are all worth having on hand.
